Colder days like we’ve had lately get us craving comfort food. So I thought I’d share this delicious black bean and quinoa soup recipe I discovered a while ago and absolutely love. It’s full of protein so one bowl for lunch is enough to keep you going until dinner without feeling hungry. Plus, it’s gluten-free and vegan if you use vetegable stock. For someone like me who has serious digestive issues, anything that falls under the vegan and gluten-free category AND tastes amazing is a winner in my book.
Warning though, if you intend to make this soup anytime soon, you need to soak the beans overnight, and the cooking time is over 2 hours, so… make sure you plan ahead. But trust me, it’s totally worth it! Click here to get the recipe!
