I’ve been obsessed with this salad lately, so much that it’s been the only thing I’ve had for dinner for the last 2 weeks… at least on those nights when I’m home. It’s basically arugula, nectarines, red onions, feta and pine nuts with a homemade Dijon mustard vinaigrette (Dijon mustard, red wine vinegar, olive oil, salt & pepper). It tastes great AND it’s healthy. Love it :)
